Morgan's Carrot Cake
- 1 cup sugar
- 1 cup brown sugar
- 4 eggs
- ¾ cup vegetable oil
- ½ cup applesauce
- 2 tsp. baking powder
- ½ tsp. salt
- 2 tsp. cinnamon
- ¼ tsp. nutmeg
- 3 tsp. vanilla
- 2 cups flour
- 8 oz. pineapple, crushed & drained
- 3 cups carrots, shredded
- cream cheese frosting
Cream together sugars, eggs, oil, and applesauce. Add baking powder, salt, cinnamon, nutmeg, and vanilla. Stir in flour, pineapple, and carrots.
Pour mixture into a well greased and floured bundt pan.
Bake at 350°F for 50-70 minutes.
Allow the cake to cool on a wire rack before tipping out of the bundt pan.
Frost with cream cheese frosting.
