Orange Oatmeal Cookies

  • 4 cups quick oats
  • 2 cups Crisco shortening
  • 2 cups sugar
  • 2 cups brown sugar
  • 4 eggs
  • 4 tsp. vanilla extract
  • 4 tsp. salt
  • 2 tsp. baking powder
  • ½ cup freshly grated orange peel
  • 4 cups flour
  • 2 cups walnuts (chopped)

In a shallow pan, toast quick oats at 350°F for 5 minutes; stir and toast for an additional 5 minutes. Set aside to cool.

Cream together shortening, sugar, and brown sugar. Add eggs, vanilla, salt, baking powder, and orange peel. Add flour, mixing after each cup. Stir in walnuts, and the toasted oats.

Drop walnut-sized servings onto a greased cookie sheet.

Bake at 350°F for 10 minutes.
