Peach and Tomato Salad

  • 1 lb peaches
  • lbs tomatoes
  • 2 Tbsp. basil, fresh
  • ¼ cup red onion, minced
  • 1 Tbsp. red wine vinegar
  • 3 Tbsp. olive oil
  • 1 tsp. honey
  • 4 oz. feta cheese
  • salt and pepper, to taste

Boil and peel the peaches and tomatoes. Chop the peaches, tomatoes, and basil into a large bowl. Stir in onion, red wine vinegar, olive oil, honey, and feta. Sprinkle with salt and pepper.
