Pickled Onions

  • 1 red onion
  • 1/2 tsp. salt
  • 1/2 tsp. sugar
  • 3/4 cups vinegar (apple cider, rice, or white wine)
  • 2-4 cups water

Pour the vinegar in a glass jar. Stir in the sugar and salt.

Peel and slice the onion into ¼ inch rings or wedges. Place the onions in a strainer in the sink.

Boil the water. Blanch the onions by slowly pouring the boiling water over them, and then rinsing them with cold water.

Gently stir the onions into the jar of vinegar.

Lid the jar and refrigerate for at least 30 minutes.
